As promised, I'm bringing you an update on my first attempt at brewing my own #kombucha!
After a week of questions like "Ew, what is in that jar?" and explaining that all that mold looking stuff is actually good for you, I sort of had a hard time believing it myself when I poured out my kombucha and went to try my first sip. I kept thinking to myself, what if I did it wrong, what if I poison myself? like the over reactive drama queen I am. After a good five minutes of looking at it, I was encouraged to finally try it with a quick "Just do it already!" from my housemate.
And what do you know, my kombucha tasted fireeee. After passing it around for everyone to taste, it got the seal of approval from all my housemates. The only complaint? That I needed to get a bigger glass jar to brew in so they could drink more.
Once I had let my kombucha ferment for the past seven days, I poured it into this nifty glass bottle with a seal-able lid (total steal from the dollar store, btw). Sealing it and letting it sit out for a few more hours actually helped boost the carbonation. I left the SCOBYs and some starter tea from this batch in the original jar and got it ready for another brew.
Within this past week, I already grew another little baby SCOBY! At first look, I was concerned as it looked different than the other two SCOBYs. But after a quick jaunt through google and sending pictures to my more seasoned kombucha friends, I learned that juvenile SCOBYs will look different than full grown ones in both color and texture.
